Why are we, humans, not in full control of our body?

If you think about it, humans can only control the basic things about our bodies, i wanted to know why we cant control every aspect of them or if it is even possible over time such as
-adrenaline(why cant we choose when this is released?)
-hearing (why cant we choose what we hear?)
-eyesight(why cant we choose to only see one color?)
-memory( why cant we remember something on command?)
-losing and gaining weight (why cant we choose to stop storing fat or start storing fat?)
-dieing or living( why cant we choose to shutdown our body, shouldn’t we be in control of that at sometime in our life?)

we can’t even control when to go to the bathroom , so it looks like we are just along for the ride on an autonomic system that doesn’t really care what we want and just goes on in its own way
