colouring home brewed wine?
i have recently made 1 gallon of red wine from juice concentrate, it is in the secondary fermentation stage (week 3) after first racking, the wine is coming along great but the colour is not exactly red red colour. how do i make this a better serving colour?
MUST
2 litres of 100% red grape juice (topped up with water to 1 gallon)
2.2lbs of sugar
5g of Young’s burgundy yeast
1 tsp pectolase
1tsp yeast nutrient
1tsp tartaric acid
SG at the start was 1.080
The colour is more a deep pink rose. On my next mix would leaving out the water and using only 1 gallon of pure juice work better? i know i would have to adjust the sugar content accordingly but that’s not a problem. Im hoping there is a better way for expense reasons as i am looking to go to 5 gallon depending on the wines taste and don’t want to be buying litres and litres of red grape juice.
Definitely, leave out the water. For now, I suppose that you could add a few drops of red food coloring, one at a time, until you get what you want. You might want to add a little glycerine too, in order to boost “mouthfeel”.
If cost is going to be a problem, consider the use of concentrates or making “country wines” (with fruit or other plant matter, other than grapes).
